Gluten-Free Minestrone Soup



A hearty and flavorful gluten-free version of the classic Italian Minestrone soup, packed with vegetables, beans, and herbs.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 can 14 oz diced tomatoes
  • 4 cups gluten-free vegetable broth
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 cup gluten-free pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Instructions:

In a large pot, heat olive oil over medium heat

Add onion and garlic, saut until translucent

Add carrots, celery, and zucchini, cook until slightly tender

Stir in diced tomatoes, vegetable broth, cannellini beans, pasta, oregano, and basil

Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is cooked

Season with salt and pepper to taste

Serve hot, garnished with fresh basil leaves if desired
