Summer Avocado Pasta Salad



This Summer Avocado Pasta Salad is a tasty mix of creamy avocados, sweet cherry tomatoes, fresh cilantro, pasta, and a tangy lime dressing. If you're having people over or just want a light and tasty meal on a hot summer day, this is the perfect dish for you.

Ingredients:

  • 8 oz pasta your choice
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels fresh or frozen
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the pasta until it is al dente

To cool it down, drain it and rinse it with cold water

Diced avocados, cherry tomatoes cut in half, corn kernels, red onion, fresh cilantro, and crumbled feta cheese should all be put in a large bowl

Put the honey, lime juice, salt, and pepper in a small bowl and mix them together with a whisk

Pour the dressing over the salad ingredients and toss them together gently to make sure everything is covered

You can serve it right away or put it in the fridge for a few hours to let the flavors mix
