Gallo Pinto with Salsa Lizano
This improved version of the Gallo Pinto recipe, which includes the well-known Salsa Lizano, will transport you to the true flavors of Costa Rica. Serve this perfect concoction of rice, black beans, and flavorful seasonings with eggs for a hearty breakfast. Garnish with cilantro.
Ingredients:
- 2 cups cooked white rice
- 1 cup cooked black beans
- 1/2 cup diced onion
- 1/4 cup diced red bell pepper
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons Salsa Lizano
- Salt and pepper to taste
- Cilantro for garnish
- Fried or scrambled eggs for serving
Instructions:
Vegetable oil should be heated over medium heat in a big skillet
Add the minced garlic, red bell pepper, and diced onion
Saut the veggies for a while until they become soft
Stir the cooked black beans into the skillet with the vegetables
Mix the cooked white rice thoroughly with the vegetables and beans in the skillet
Add the Salsa Lizano to the mixture and stir until everything is heated through and well combined
To taste, add salt and pepper for seasoning
Add some cilantro as a garnish, then serve hot with scrambled or fried eggs
