NYC Vegan Bagel Sandwich
With this vegan bagel sandwich, you can taste the lively flavors of New York City. With lots of fresh vegetables and tangy hummus, it's a filling meal that's great for exploring the city on the go.
Ingredients:
- 1 vegan bagel
- 1/4 cup hummus
- 1/2 cup sliced cucumber
- 1/2 cup shredded carrots
- 1/2 cup sliced tomato
- 1/4 cup alfalfa sprouts
- 1 tablespoon balsamic glaze
- Salt and pepper to taste
Instructions:
Slice the bagel in half and toast it lightly
Spread hummus on both sides of the bagel
Layer cucumber slices, shredded carrots, tomato slices, and alfalfa sprouts on one side of the bagel
Drizzle balsamic glaze over the veggies and sprinkle with salt and pepper
Top with the other half of the bagel
Slice in half and serve
